Skye Bar & Restaurant and Hotel Unique, in São Paulo, are indissolubly connected. However, you don't need to be a guest at the hotel to enjoy this elegant rooftop perch serving the cuisine of chef Emmanuel Bassoleil and some of the best skyline views in town.
The sleek ambience at Skye and Hotel Unique, with its eye-catching plan by Ruy Ohtake, design by João Armentano and landscaping by Gilberto Elkis, is a perfect match for the French chef's approach to cooking, strongly focused on all the senses.

The São Paulo skyline, latent with life yet silent and calm beyond the enormous glass windows, is ever present.

Formally set tables transition into the bar area with upholstered chairs, which in turn merges, through more glass, into the red-tile pool and surrounding area with a 360-degree view of São Paulo which has helped make the hotel and the restaurant famous worldwide.

The restaurant's name was inspired in British singer/songwriter Skye Edwards.

The Menu:


As executive chef, Emmanuel Bassoleil is in charge of everything that's related to culinary at the Unique, including the hotel's grand events. His stature as a professional is imbued in the details - the culinary experience is chic from the day's start. Breakfast includes the freshest fruit, scrumptious mini muffins and creamy café au lait.

Chef Bassoleil's experience encompasses classic, regional and nouvelle cuisine.

His creations incorporate the heightened perceptions of the avid traveler and an insider's versatility in the use of Brazilian ingredients.

One of the favorites is Banana leaf “papillotte” of sole Filet, cassava and fresh asparagus with "Beurre Blanc" (R$90). The Kobe Beef Carpaccio is served with a passion fruit vinaigrette (R$55); from the motherland come the Niçoise Salad with Crunchy Poached Egg (mixed green salad, green beans, potato, tomato, sweet pepper, tuna, anchovy and black olives, R$44;) Shrimp and Crab Meat with Coconut Milk and Catupiry Cheese (R$38) is very Brazilian indeed.

The chef's desserts are famous; maybe you should try the Vacherin (R$24) first. The treat from Burgundy consists of two scoops of red fruit ice cream between layers of meringue, with raspberry syrup and cassis liqueur topping.

The wine and champagne list is another expression of the chef's international versatility. French wines and champagne are present and very well represented with items such as Veuve Clicquot La Grande Dame 1998 (R$1050 a bottle), yet there are quite a few labels from Chile as well as a handful of hand-picked labels from Brazil and the US.

Skye is a safe haven for the martini drinker. Here the cocktail is taken seriously with Martini Madness. The menu has 20 variations, all at R$28, and at the top of the list is Watermelon Unique, a celebration of the hotel's outline (Vanilla Vodka, watermelon juice and watermelon liqueur).

The Chef's New App:


Emmanuel Bassoleil by Numbers is a virtual book with 22 recipes, photos (some of them Cinemagraphs) and a roundup of his life represented by the numbers 50-35-25-10.

Turning 50 and celebrating 35 years in his career, 25 years in Brazil and 10 years at the helm of Skye inspired the chef to launch the app as a gift for those who have followed him on the journey.

The cream of cassis he helped his mom prepare as a kid; two recipes he developed while traveling around the world as a sous chef on a cruise ship; 12 recipes which help tell his story as a Brazil resident and the winner of multiple awards; and four recipes that are an intrinsic part of his success at the Skye make up the virtual book.
